The Cat in the Hat Cake



Here is the cake I made for my oldest son's 3rd birthday. It was 7 layers alternating between vanilla and chocolate cake. I used a chocolate truffle filling between the vanilla layers and a whipped cream and mini chocolate chip filling between the chocolate layers. I also was very excited when I found a new NON Wilton buttercream icing. I've always used the Wilton recipe but this year I wanted something without shortening. I have included the Homemade Buttercream Frosting below.

It is simple to make, and irresistible to eat.

1 Cup (2 Sticks) of Butter -softened at room temperature
1 Teaspoon of Vanilla Extract
1 1lb Box of Powdered Sugar - sift for a smoother frosting
1-3 tablespoons of milk, or 1/2 and 1/2, or heavy cream- I chose HEAVY CREAM!

Using a mixer beat softened butter and vanilla together until smooth.
Add the powdered sugar 1 cup at a time, beat until smooth before adding additional cups.
Add the milk 1 tablespoon at a time and beat until you get desired consistency.

This will be enough for a 2 layer cake.

I baked the cakes Late Wed Night. Made the icing and fillings on Thursday morning and iced the cakes late Thursday night. Over all I spent about 5 hours. I really enjoyed having the day before the party to "relax" a little and not worry about the cake.
