D is for Dinner Rolls


Dinner Rolls
This recipe comes from The Comfort Table by Katie Lee (Joel)

Ingredients1/4 cup warm water
2 packages yeast (4 1/4 teaspoons)
1 teaspoon sugar, plus 1 cup
2 large eggs, lightly beaten
1/2 cup canola oil
3 teaspoons salt
1 cup cold water
1 cup boiling water
7 cups all-purpose flour, plus 1 cup or more as needed
1/4 cup warm water

1 cup boiling water
7 cups all-purpose flour, plus 1 cup or more as needed

Time:
Prep Time: 45 minutes
Inactive Prep Time: at least 6 hours
Cook Time: 15 minutes

Serves: 24 rolls
special equipment: Two 12-cup muffin tins

In a small bowl mix 1/4 cup warm water with the yeast and 1 teaspoon sugar. Set aside for about five minutes, until the mixture starts to thicken and bubble slightly. If the mixture does not start to thicken and bubble slightly, the yeast is not working. Check the expiration date on the yeast and start over.

In a large bowl stir together the reserved 1 cup sugar, eggs, oil, and salt. Mix in the cold water and then boiling water. Add the yeast mixture and stir until well blended. Slowly add in the 7 cups of flour until incorporated.

Turn the dough out onto a floured surface and knead with floured hands for about 8 to 10 minutes, adding in the extra 1 cup or more of flour as needed. Put the dough into a clean large bowl. Cover with plastic wrap and refrigerate for 3 hours.

Make a fist and Punch down the dough.

(At this point the dough can be recovered with plastic wrap and stored in the refrigerator, for up to 24 hours. Remove the dough, and continue with the recipe 3 1/2 hours before you are ready to bake.)

Place the dough on a work surface. Using a large knife, cut the dough into 24 equal pieces. Divide each piece into three 1-inch balls. Place each set of three balls into one cup of two greased 12-cup muffin tins. Allow the rolls to rise for about 3 hours at room temperature.

Thirty minutes before baking preheat the oven to 350 degrees F.

Bake for 15 minutes, or until golden on top. Remove from the tins and serve warm.
