Hello Faithful Readers and Followers,
Today I wanted to share with you an easy and sometimes forgotten cookie recipe. When I was pregnant with my oldest son, I was reintroduced to this fabulous cookie, and since then I always make sure to have the following ingredients in stock for one of those weak moments and trying days.
Introducing.......
The NO BAKE Chocolate Oatmeal Cookie
2 cups sugar
1 stick of butter
1/3 cup cocoa powder
1/2 cup milk
1 teaspoon pure vanilla extract
1/2 cup peanut butter, creamy or crunchy
2 1/2 - 3 cups of rolled oats
In a medium saucepan, combine the sugar, butter, cocoa, milk, and vanilla. Bring to a SLOW boil and simmer until the sugar has dissolved. Stir in the peanut butter. Remove from the heat. Stir in 2 1/2 cups of oats. The mixture should be thick. Add the remaining 1/2 cup oats if necessary.
Line a cookie sheet with parchment/wax paper. Drop the mixture by the heaping tablespoon onto the paper. Allow the cookies to firm up at room temperature, about 1 hour. Store in airtight container.
* I've noticed the less humid the day, the faster the cookies set*
